8 each  small potatoes
1 pinch  salt
1 pinch  sugar
3 each  medium garlic cloves
1 tbsp  vinegar
1 pinch  ground cumin
1 pinch  ground cayenne (red pepper)
2 tbsp  extra virgin olive oil
2 tbsp  fresh cilantro
10 each  large black olives, canned
  1. Begin by chopping the potatoes into chunks and then put them in a pan with water to cover along with the salt and sugar. Bring the potatoes to a boil, then reduce the heat and boil gently for about 10 minutes, or until the potatoes are tender.
  2. Drain well and then leave to cool in a colander.
  3. After the potatoes are cool enough to handle, slice the potato chunks and put them into a bowl. Next, sprinkle the garlic, vinegar, cumin, and cayenne or paprika over the salad.
  4. Drain well and then leave to cool in a colander.
