Ingredients Directions
  1. Using a saucepan, bring the chicken broth and garlic to a boil.
  2. Add couscous and stir. Remove from heat and cover for 7 minutes.
  3. Fluff with a fork and transfer to a large bowl.
  4. Add the green onion, parsley, cucumber, mint, beans, tomato, roasted pepper, and olives to the couscous; mix well.
  5. Using a small bowl, mix together the lemon juice, olive oil, and paprika. Toss with the couscous mixture.
  6. Add the feta, if desired.
  7. Season with the salt and pepper to taste.
  8. Serve immediately, or refrigerate
