2 tbsp  vegetable oil
0 1/2 lb  boneless skinless chicken breasts
0 1/2 each  medium bell peppers
1 each  small onions
0 1/2 cup  picante sauce
1 1/2 cup  Baking Mix, all purpose, dry
0.3333 cup  cold water
1 1/2 cup  low sodium shredded mozzarella
  1. Place oven rack to lowest position. Heat oven to 450 degrees F. Grease 12-inch pizza pan with shortening or butter.
  2. Heat 10 inch skillet over medium high heat. Add oil, rotate skillet to coat bottom and sides. Cook chicken in oil for 3 minutes, stirring constantly.
  3. Stir in bell pepper and onion. Cook 3 to 4 minutes, stirring constantly, until vegetables are crisp tender and chicken is no longer pink in the center, remove from heat.
  4. Stir in picante sauce and set aside.
  5. Place baking mix in very hot water and stir until soft dough forms, beat vigorously with spoon 20 strokes.
  6. Press dough in pizza pan, using fingers dipped in baking mix.
  7. Pinch edge to form 1/2 inch rim.
  8. Sprinkle 3/4 cup of the cheese over crust. Top with chicken mixture. Sprinkle with remaining 3/4 cup cheese.
  9. Bake 12 minutes or until crust is golden brown and cheese is melted and bubbly.
