1 each  cooking spray
2 oz  honey
1 oz  chopped pecans
0 1/4 tsp  ground cinnamon
4 each  medium peaches
2 tbsp  margarine
0 1/4 tsp  vanilla extract
  1. Preheat the oven to 350 °F. Coat 9" round cake or pie pan with cooking spray.
  2. Add honey to pan. Place in oven 2 minutes to soften honey. Remove pan from oven and tip pan to evenly coat with honey.
  3. Evenly sprinkle pecans over honey.
  4. Sprinkle cut side of peaches with cinnamon.
  5. Place peaches, cut side down, on top of pecans. With fork, pierce each peach half several times.
  6. Baked, uncovered, 20 minutes, until tender.
  7. Place peaches, cut side up, on serving platter. Cover loosely and set aside.
  8. Into hot baking pan, add margarine and vanilla to honey-pecan dripping, stirring until margarine melts.
  9. Evenly divide sauce, and spoon over peaches. Let stand 10 minutes.
  10. Serve warm or at room temperature.
