1 each  cooking oil, 0.33 second spray
1 cup  white all purpose flour
0 3/4 cup  quick cooking rolled oats
0.3333 cup  wheat germ
2 tsp  low sodium baking powder
1 tsp  ground cinnamon
0 1/2 tsp  baking soda
0.125 tsp  salt
0 3/4 cup  fat free milk
0 1/2 cup  packed light brown sugar
1 floz  liquid egg substitute
0 1/4 cup  unsweetened applesauce
0 1/2 tsp  vanilla extract
0 1/2 cup  Figs, dried
  1. Preheat the oven to 400 degrees F.
  2. Line a 12-cup muffin pan with paper-bake cups or lightly spray with vegetable oil spray.
  3. Combine the flour, oats, wheat germ, baking powder, cinnamon, baking soda, and salt in a medium bowl, then make a well in the center.
  4. Stir together the remaining ingredients except the figs in another medium bowl.
  5. Stir the liquid mixture into the dry mixture until just moistened (batter should be lumpy), then fold in the figs.
  6. Spoon the batter into the muffin cups, using about 1/4 cup batter for each cup. Bake for 10 to 12 minutes, or until a wooden toothpick inserted in the center comes out clean.
  7. Cool on a wire rack for 5 minutes, then remove the muffins from the bake cups. Serve warm or at room temperature.
