1 tsp  olive oil
1 1/2 cup  fresh chopped red onion
1 pinch  salt
1 pinch  black pepper
28 oz  canned unsalted diced tomatoes
1 1/2 cup  frozen chopped spinach
2 cup  red lentils, dried
2 cup  cold water
2 tsp  dried basil
1 1/2 tsp  cardamom, ground
1 tsp  ground cumin
0 1/2 tsp  ground cayenne (red pepper)
0 1/2 tsp  curry powder
  1. Start off by heating the oil in a large pot over medium heat, and cook the onion until golden brown.
  2. Season with salt and pepper, mix in tomatoes, spinach, and lentils, and pour in water.
  3. Add the basil, cardamom, cumin, cayenne pepper, and curry powder.
  4. Bring to a boil, reduce heat to low, and simmer 25 minutes, stirring occasionally, until lentils are tender.
  5. Transfer the soup to a blender, and blend until smooth before serving.
