Ingredients Directions - Preheat the oven to 350 degrees F.
- Use a large bowl, and stir together the oil, brown sugar, sugar, egg, egg white, and vanilla.
- In a separate small bowl, combine the flour, cinnamon, and baking soda.
- Add the flour mixture to the sugar mixture. Add the oats and pecans, mix well.
- Coat a cookie sheet with non-stick cooking spray and drop cookie batter by rounded teaspoonfuls onto baking sheet.
- Bake for 10 to 12 minutes, or until lightly browned. Remove from oven and let cool on wax paper.
