1 each  Cucumber, fresh, medium
0 1/2 lb  Jicama, fresh, small
2 each  medium carrots
6 tbsp  fresh cilantro
5 tbsp  fresh lime juice
1 tbsp  extra virgin olive oil
1 1/2 tsp  hot red pepper flakes
1 pinch  salt
1 pinch  black pepper
  1. In mixing bowl, combine cucumber, jicama, carrots, cilantro, lime juice, oil, and pepper flakes. Season with salt and pepper, and toss gently to mix.
  2. Serve immediately or refrigerate up to 3 days.
