Preheat oven to 350 degrees F and lightly grease two baking trays. Put the apricots in a bowl with the boiling water and allow to soak for 10 minutes.
While the mixture cools, combine the oats, flour, oat bran, sugar, walnuts, baking powder and spices in a separate large bowl.
Beat the egg whites until stiff peaks begin to form, and then fold in the cooled apricot mixture. Add the oil, then mix into the dry ingredients.
To bake, drop spoonfuls of the mixture onto the prepared baking trays and then bake until lightly brown, roughly 12 to 15 minutes. Let cool for 5 minutes before removing them from the tray and then transfer to a wire cooling rack for further cooling before serving.
