Ingredients Directions
  1. Combine the potatoes, carrots, celery, zucchini, onion, parsley, bay leaves, salt, and pepper in a large, heavy saucepan or Dutch oven.
  2. Stir in the broth, and bring to a boil over high heat. Reduce the heat and simmer, covered, for 45 minutes to 60 minutes, or until the vegetables are very tender. Remove the bay leaves.
  3. Ladle the soup into bowls and top with cheese.
