1 oz  whole pickled jalapeno peppers
0.3333 cup  fresh chopped red onion
0 1/2 cup  chopped red bell peppers
0 1/2 cup  fresh cilantro
2 each  fresh mango
4 tbsp  fresh lime juice
1 tbsp  olive oil
1 lb  raw medium shrimp
1 tsp  minced garlic
0 1/4 cup  tequila, 80 proof
1 pinch  salt and pepper
  1. Place the jalapeno, onion, red pepper, and cilantro in a food processor, and pulse until chopped.
  2. Peel the mangoes and chop, adding the jalapeno mixture, and 2 tablespoons lime juice, and transfer to a bowl.
  3. Heat the oil in a large skillet over medium heat, and stir-fry the shrimp and garlic until the shrimp is almost done, for about 5 minutes.
  4. Add the remaining 2 tablespoons lime juice and tequila, and cook for about 5 minutes, or until the shrimp are done.
  5. Add the salt and pepper, and stir the shrimp into the salsa mixture, and serve.
