6 each  eggs
2 tbsp  grated Parmesan cheese
1 pinch  black pepper
1 each  cooking spray
0 3/4 cup  fresh mushrooms
1 tsp  crushed garlic
0 1/4 tsp  ground thyme
10 oz  broccoli, chopped, frozen
2 oz  shredded mozzarella cheese
  1. In medium bowl, whisk eggs, Parmesan cheese, and black pepper. Set aside.
  2. Thaw broccoli by placing in colander over sink to thaw at room temperature or by running under cold water.
  3. Lightly coat 10" oven-proof skillet with cooking spray and heat over medium. Add mushrooms, garlic, and thyme. Cook 2 minutes, stirring often until mushrooms are tender.
  4. Mix in broccoli and spread mixture evenly over bottom of skillet.
  5. Reduce heat to low and pour egg mixture over vegetables. Cover and cook 10 minutes.
  6. Preheat oven broiler.
  7. Place skillet under broiler 6" from heat source for 5 minutes.
  8. Sprinkle mozzarella over top and broil 1 minute, until cheese has melted.
  9. Remove from oven. Let stand 5 minutes. Slice frittata into wedges and serve.
