Ingredients Directions
  1. Trim any visible fat from the veal. Mix the flour with the salt and pepper, and dredge the veal in the flour mixture.
  2. In a large skillet coated with nonstick cooking spray, heat the olive oil over medium-high heat, and sauté the veal cutlets about 1 1/2 minutes on each side, or just until done.
  3. Remove from the skillet, and set aside. In the same skillet, add the mushrooms, green pepper, green onions, and garlic, cooking over low heat for about 5 minutes, or until almost tender.
  4. Add the chicken broth and lemon juice, scraping up the browned bits from the bottom of the pan, and bring to a boil.
  5. Lower the heat, and return the veal to the sauce, and cook for about 3 to 5 minutes, or until the veal is heated through. Serve immediately.
