2 each  large bananas
1 each  egg whites
1 tbsp  sweetener (sugar substitute)
0 1/4 tsp  baking soda
3 tbsp  unsweetened applesauce
1 cup  self-rising flour
2 tbsp  cold water
  1. Preheat oven to 350 degrees F. Spray 2 muffin tins with nonstick cooking spray.
  2. In a medium-sized bowl, beat the egg white and sugar until fluffy. Stir in the mashed banana.
  3. Add the baking soda to the applesauce in a separate small bowl, let it froth for a minute, and then add to the banana mixture.
  4. Gently fold in flour. Add the water and mix gently.
  5. To bake, pour the batter equally in the muffin tins and cook for 15 to 20 minutes, or until a toothpick inserted in the center of muffin comes out clean.
