1 1/4 lb  medium zucchini
0 1/4 cup  fresh cilantro
2 tbsp  red wine vinegar
1 tbsp  olive oil
1 each  medium garlic cloves
0 1/4 tsp  salt
1 pinch  black pepper
2 tbsp  chopped pecans
  1. Peel and cut zucchini into 2" pieces. Squeeze zucchini with paper towels to remove excess water.
  2. In food processor fitted with steel blade, process zucchini, cilantro, olive oil, garlic, salt, and pepper until mixture is smooth.
  3. Spoon mixture into serving bowl and fold in nuts.
  4. Cover and refrigerate 1 hour before serving.
