12 oz  fresh portobello mushroom
1 pinch  black pepper
12 oz  button mushrooms
0 1/4 cup  chopped scallions
2 tsp  minced garlic
1 tsp  fresh lemon juice
0 1/2 tsp  balsamic vinegar
1 tbsp  extra virgin olive oil
0 1/2 tsp  fresh thyme
1 pinch  salt
  1. Cut portobello mushrooms into 1/4" cubes. Cut white button mushrooms in quarters.
  2. Place mushrooms, chopped scallions, and garlic in microwave-safe bowl. Cover. Microwave on high 1 minute.
  3. Continue to microwave on high, at 30-second intervals until mushrooms are tender.
  4. Drain liquid.
  5. Transfer scallions and mushrooms to food processor. Pulse several times to chop mixture, scraping down sides of bowl as necessary.
  6. Add lemon juice, basalmic vinegar, olive oil, thyme, salt, and pepper. Pulse until puréed.
  7. Transfer to serving bowl. Serve warm.
