2 cup  bread crumbs, toasted
0 1/4 cup  chopped parsley
2 1/2 tbsp  dijon mustard
1 1/2 tbsp  fresh lemon juice
1 tsp  black pepper
0 1/2 tsp  paprika
2 lb  top sirloin steak, lean
  1. Preheat grill to medium-high.
  2. In shallow dish, large enough to hold steak, mix breadcrumbs and parsley.
  3. In small bowl, combine mustard, lemon juice, pepper, and paprika. Transfer 1/2 of mix to separate bowl and set aside.
  4. Pat steak dry with paper towels, and brush both sides with mustard mix. Wash basting brush.
  5. Cook 10-12 minutes, turning once, until internal temperature reaches 145°F.
  6. Remove steak from grill. Brush steak on both sides with remaining mustard mixture. Place steak in breadcrumbs, turning to coat both sides. Serve.
