6 oz  parmesan couscous mix
1 1/4 cup  low sodium vegetable broth
1 lb  extra lean ground beef (5% fat)
1 each  small onions
1 each  medium zucchini
1/2 tsp  minced garlic
1 cup  fresh cherry tomatoes
1 lb  fresh asparagus
0 1/4 cup  fresh lemon juice
0 1/4 tsp  kosher salt
0 1/4 tsp  lemon pepper seasoning
0 1/4 tsp  hot red pepper flakes
2 tbsp  chopped parsley
2 tbsp  fresh basil
  1. In small saucepan, prepare couscous in vegetable broth according to package directions.
  2. Chop onion and zucchini.
  3. Snap or cut off tough ends of asparagus. Cut into 1" pieces.
  4. In large, nonstick skillet over medium-high heat, brown beef and onions. Drain.
  5. Add zucchini, squash, garlic, tomatoes, asparagus, lemon juice, kosher salt, lemon pepper, and red pepper. Sauté 5-7 minutes until tender.
  6. Stir in couscous, garnish with parsley and basil.
