1 each  cooking spray
1 tsp  vegetable oil
2 each  boneless skinless chicken breasts
4 cup  fresh mushroom slices
0 1/2 cup  low fat unsalted chicken broth
3 tbsp  brandy
1 tbsp  low sodium soy sauce
0 1/4 tsp  black pepper
  1. Coat a large non-stick skillet with cooking spray and add oil. Place over medium-high heat until hot.
  2. Add chicken, and cook 6 to 8 minutes on each side or until chicken is done. Transfer chicken to a serving platter. Set aside, and keep warm.
  3. Add mushrooms to skillet and cool 3 minutes, stirring often. Stir in chicken broth and remaining 3 ingredients. Bring to a boil. Reduce heat to low and simmer uncovered for 6 minutes. Spoon mushroom mixture over chicken.
