0.3333 cup  Zsweet® all natural sweetener
1 1/2 tsp  baking soda
0.6667 cup  unsweetened cocoa powder
1 cup  unsweetened applesauce
1 1/2 cup  cold water
1 tsp  vanilla extract
1 cup  canned sauerkraut, drained
2 cup  white all purpose flour
1 each  canola cooking spray
  1. Preheat oven to 350 degrees F. Coat a bundt pan with cooking spray.
  2. In a large mixing bowl, combine all dry ingredients and mix well.
  3. Add applesauce, hot water, vanilla extract, and mix.
  4. Add pureed sauerkraut and blend thoroughly.
  5. Pour batter into a prepared pan; bake in the center of the oven until tester comes out clean, about 55 to 60 minutes.
  6. Cool in pan for about 20 minutes, then turn out onto baking rack and cool completely. Sprinkle with a bit of cocoa powder mixed with Zsweet if desired.
