Ingredients Directions
  1. In a medium bowl combine corn, green pepper, tomato, cilantro, vinegar, and salt; stir well and set aside.
  2. In a small bowl combine chicken and hot salsa; arrange mixture evenly over 3 tortillas. Sprinkle evenly with cheese, and top with remaining tortillas.
  3. Coat a medium nonstick skillet with cooking spray; place over medium-high heat until hot. Place one quesadilla in skillet.
  4. Cook for 1 minute on each side or until golden. Repeat procedure with remaining quesadillas. Cut each quesadilla into 4 wedges.
  5. Arrange shredded lettuce on each of individual serving plates, if desired.
