1 each  cooking spray
0 1/2 cup  chopped red bell peppers
0 1/4 cup  chopped scallions
2 each  eggs
2 each  egg whites
1 tsp  chili powder
0 1/2 tsp  ground cumin
0.125 tsp  ground red pepper (cayenne)
0 1/2 cup  shredded cheddar cheese
  1. Preheat oven at 425°F. Grease two miniature muffin tins.
  2. Coat medium skillet with cooking spray and heat over medium. Sauté bell peppers and scallions until tender.
  3. In large bowl, lightly beat all eggs. Add sautéed vegetables, chili powder, cumin, red pepper and cheese.
  4. Place approximately 1 tablespoon of mixture into muffin tins until mixture is gone. Bake 8-10 minutes or until centers are set. Serve hot or cold.
