2 each  Cucumber, fresh, medium
1 oz  smoked salmon
8 oz  Neufchatel cream cheese
0 1/2 tbsp  fresh lemon juice
0 1/2 tsp  black pepper
1 tsp  dried dill weed
  1. Cut the cucumbers into about 1/4 inch thick slices and place on paper towels to drain while you prepare the salmon cream.
  2. In a food processor, combine the smoked salmon, Neufchatel cheese, lemon juice, and pepper. Blend until smooth.
  3. Fit a pasty bag with your choice of top and spoon the salmon cream into the bag. Pipe 1 teaspoon of the salmon cream atop each cucumber slice and garnish with dill, if desired.
