2 tsp  olive oil
1 each  medium garlic cloves
1 tbsp  shallots, chopped
1 tsp  unsalted tomato paste
0.3333 cup  Wine, dessert, sweet, madeira
1 tbsp  fresh lemon juice
2 tsp  Cream, light
0 1/4 cup  chicken broth, low sodium
2 tsp  Butter, unsalted
1 pinch  black pepper
1 pinch  salt
  1. In saucepan, heat olive oil over medium heat. Sauté garlic and shallot until translucent.
  2. Add tomato paste and sauté for 30 seconds, stirring as needed.
  3. Add Madiera, lemon juice, broth, and light cream. Simmer until mixture is reduce by half.
  4. Add butter and whisk to form an emulsion. Season with salt and pepper ,if desired. Keep sauce warm until ready to serve.
