12 each  rice paper wrappers
1 each  medium carrots
0 1/2 each  medium cucumber
4 each  scallions
1 tbsp  sesame seeds
4 tbsp  hoisin sauce
0 1/2 cup  fresh cilantro
12 oz  boneless skinless chicken breasts
  1. Place the rice paper wrappers in a heatproof bowl and cover with hot water, soak for 5 minutes until soft and pliable.
  2. In a separate bowl, combine and toss together the carrot, cucumber, scallions, and sesame seeds.
  3. Drain the rice papers on a clean dish towel and spread 1 teaspoon of the hoisin sauce across the center of each. Sprinkle with a few cilantro leaves.
  4. Place the vegetables and then the chicken on top. Make sure you don't overfill the papers, they may split, if you do.
  5. Carefully, fold 2 sides in, then roll up to make a neat cylindrical shape. Serve immediately with extra hoisin sauce for dipping.
