Ingredients 6.0 6 each Tortilla, flour, ready to bake, 6" 12.0 12 oz extra lean ground beef (5% fat) 0.5 0 1/2 cup fresh chopped onion 2.0 2 each medium garlic cloves 0.5 0 1/2 cup chopped green bell peppers 0.5 0 1/2 cup Salsa 2.0 2 tsp Seasoning, Mexican 1.5 1 1/2 cup Lettuce, iceberg 2.0 2 each fresh tomatoes 0.5 0 1/2 cup Cheese, colby & monterey jack, reduced fat, shredded 2.0 2 tbsp Cheese, colby & monterey jack, reduced fat, shredded Easy Fresh Salsa 2.0 2 each fresh tomatoes 0.25 0 1/4 cup fresh chopped red onion 0.25 0 1/4 cup chopped green bell peppers, stir fried 2.0 2 tsp fresh cilantro 1.0 1 tsp garlic cloves, chopped 1.0 1 pinch black pepper 1.0 1 cup tabasco sauce 1.0 1 pinch salt Directions - Wrap tortillas in foil, place in a 350 degree oven for approximately 10 minutes or until warmed.
- In a large skillet, cook ground beef, onion, and garlic over medium-high heat until beef is brown and onion is tender. Drain off fat. Stir in sweet pepper, 1/2 cup Easy Fresh Salsa (or bottled salsa), and taco seasoning. Bring to boiling, reduce heat. Simmer, covered, for 10 minutes
- Top each tortilla with about 1/2 cup of the beef mixture and some of the lettuce and tomatoes. Sprinkle with some of the 1/2 cup cheese. Fold in sides, roll up. Cut in half to serve.
- If desired, sprinkle with additional cheese.
- Easy Fresh Salsa
- Combine tomatoes, onion, sweet pepper, cilantro, garlic, black pepper in a medium bowl. If desired, add hot pepper sauce. Season to taste with salt. Serve immediately or cover and chill for up to 3 days. Stir before serving. Makes approximately 1 2/3 cup.
