1 each  Squash, summer, all types, fresh, small
0 1/2 each  medium red bell peppers
1 each  medium zucchini
1 each  cooking spray
1 tsp  black pepper
0 1/4 tsp  salt
1 each  large tomato
0 1/4 cup  light mayonnaise
2 tbsp  pesto sauce
1 tbsp  fresh basil
1 tbsp  fresh oregano
4 each  Tortilla, flour, ready to bake, 6"
0 3/4 cup  Cheese, mozzarella, shredded
  1. Lightly coat squash, sweet pepper, and zucchini with nonstick spray.
  2. Sprinkle with black pepper and salt. If using a charcoal grill, place vegetables on the rack of a grill with a cover directly over medium coals.
  3. Grill, uncovered, until crisp-tender, turning once halfway through grilling. Allow 5 to 6 minutes for squash and zucchini and 8 to 10 minutes for sweet pepper. Remove vegetables from grill.
  4. Chop grilled vegetables. Combine in a medium bowl, the chopped vegetables, tomato, mayonnaise, pesto, basil, and oregano. Place tortillas on grill rack directly over heat.
  5. Cover and grill for 1 to 2 minutes or until lightly toasted on one side. Turn tortillas over and spread the vegetable mixture over the toasted sides of tortillas. Sprinkle with shredded cheese.
  6. Cover and grill for 2 to 3 minutes more or until tortillas are lightly toasted, vegetables are heated and cheese begins to melt.
  7. Carefully remove from grill.
  8. For a gas grill, preheat grill. Reduce heat to medium. Place vegetables and the tortillas over heat. Cover and grill as above.
