2 each  large apples
2 tsp  fresh lemon juice
1 1/2 cup  low carb baking mix
2 tbsp  SPLENDA® No Calorie Sweetener, granulated
2 tsp  baking powder
0 1/2 tsp  ground cinnamon
0 1/4 tsp  salt
1 each  medium eggs
1 1/2 cup  whole milk
3 tbsp  vegetable oil
1 each  cooking spray
1 cup  unsweetened applesauce
  1. Peel, core, and finely chop apples.
  2. In medium bowl, combine apples and lemon juice.
  3. In another medium bowl, combine baking mix, SPLENDA®, baking powder, cinnamon, and salt.
  4. Add egg, milk, and oil to dry ingredients. Stir just until moistened (the batter should be lumpy).
  5. Gently fold in apple mixture.
  6. Heat non-stick griddle or skillet over medium (until a few drops of water dance across the surface).
  7. For each pancake, pour 1/4 cup batter onto hot griddle, spread batter into a 4-inch circle.
  8. Cook 1 to 2 minutes on each side or until pancakes are golden, turning to second sides when pancake surfaces are bubbly and edges are slightly dry.
  9. Serve warm with applesauce.
