Ingredients Directions
  1. Place eggplant and salt in a saucepan with enough water to cover eggplant. Cook until tender, about 8 to 10 minutes, then drain and cool.
  2. Add cheese, milk, margarine, hot sauce, pepper, and eggs and stir. Spread mixture in a 2-quart casserole dish coated with cooking spray. Bake at 350 degrees F for 30 minutes. Serve immediately.
