Ingredients Directions
  1. Coat a large pot with nonstick cooking spray, add the olive oil, and cook the diced chicken breasts over medium high heat until done, stirring, and remove the chicken from the pan.
  2. Set aside. Add the onion and garlic to the pan. Sauté until tender, and stir in the tomatoes, chicken broth, green chilies, oregano, and cumin, and add the chicken.
  3. Bring to a boil, reduce the heat, and simmer for 20 minutes.
  4. Add the beans, and cook until heated (about 5 minutes). Next add the lime juice and pepper. When ready to serve, spoon into bowls, and serve topped with cheese.
