Ingredients Directions
  1. Preheat the broiler and place the rack so that it is 4 inches from heat.
  2. Wash the zucchini and trim off the edges, then slice diagonally 1/4 inch thick so that it makes 16 slices and place the zucchini on a nonstick cookie sheet on a wire rack.
  3. Stir together the pizza sauce, tomato paste, and oregano in a cup.
  4. Spread a scant teaspoon of sauce over each slice.
  5. In a small bowl toss together the mozzarella and Parmesan cheeses.
  6. Place 1 tablespoon of the cheese mixture on each zucchini slice, pressing mixture down into the sauce.
  7. Place 1 olive on each of 8 pizza bites, then take pepperoni slices and arrange 1 on top of each 8 remaining pizza bites.
  8. Take cookie sheet and place under broiler, broiling pizza bites for 3 minutes or until the cheese has melted and zucchini are tender, then remove from broiler and immediately serve pizza bites.
