8 oz  Bread, French, large slice
6 oz  part skim shredded mozzarella
3 each  fresh tomatoes
1 cup  fresh cucumber, peeled and chopped
0 1/2 cup  fresh basil
0.3333 each  red onion
0.3333 each  Olives, green, manzanilla, stuffed
0 1/4 cup  Juice, tomato, canned, org
2 tbsp  balsamic vinegar
1 tbsp  olive oil
0 1/2 tsp  black pepper
0 1/4 tsp  salt
2 cup  garlic cloves, chopped
2 oz  fresh basil
  1. In a large bowl, combine the first 7 ingredients. Toss gently.
  2. Combine tomato juice and next 5 ingredients in a small jar; cover tightly and shake vigorously.
  3. Pour over bread mixture and toss gently. Cover and chill 30 minutes before serving. Garnish with basil sprig (optional).
