Peel and devein shrimp, coarsely chop, and set aside.
Combine egg and egg whites; set aside.
Coat a wok or a large nonstick skillet with cooking spray, drizzle with oil, and heat on medium-high until hot. Add shrimp; stir-fry 2-3 minutes or until shrimp turns pink. Remove from wok/skillet and set aside.
Add green onions and next 3 ingredients to wok/skillet and stir-fry 3 minutes or until tender. Add egg mixture, stirring gently until set. Add peas, and stir-fry 2 minutes. Add rice, and stir-fry 2 minutes. Add cooked shrimp, soy sauce, and salt, and stir-fry until thoroughly heated.
