1 each  medium red bell peppers
1 each  chopped green bell peppers
1 each  red onion
1 each  medium zucchini
1 each  medium carrots
2 tbsp  olive oil
1 tbsp  fresh lemon juice
1 tsp  black pepper
0 1/2 tsp  salt
1 each  cooking spray
  1. Chop the peppers, onion, squash and carrot into 1/2-inch pieces. Coat the grill with cooking spray and preheat for 5 minutes.
  2. Combine the oil, lemon juice, pepper and salt in a small bowl.
  3. Place the vegetables on the grill and sprinkle with the oil and lemon seasonings. Grill for 6-8 minutes, or until vegetables are tender-crisp.
