4 each  lean lamb loin chops
1 tsp  black pepper
0 1/2 tsp  salt
2 cup  Papaya, fresh, cubes
1 cup  peeled and sliced peaches
1 tbsp  fresh chopped red onion
2 tbsp  fresh cilantro
1 tbsp  fresh lemon juice
0 1/4 tsp  salt
1 each  cooking spray
  1. Cut all visible fat from the chops. Coat the grill with cooking spray and preheat for 5 minutes.
  2. Place the chops in the grill and sprinkle with the pepper and 1/2 teaspoon of salt. Grill for 4-6 minutes.
  3. In a medium bowl, mix together the papayas, peaches, onion, cilantro, lemon juice, and 1/2 teaspoon salt.
  4. To serve, place one lamp chop on each plate and cover with salsa.
