1 tbsp  extra virgin olive oil
1 each  medium onions
0 1/2 each  medium red bell peppers
0 1/2 each  chopped green bell peppers
0 1/2 lb  extra lean ground beef (5% fat)
0 1/2 lb  ground turkey
1 cup  Salsa, thick & chunky, mild
1 each  eggs
0 3/4 tsp  salt
0 1/2 tsp  black pepper
1 each  medium garlic cloves
0 1/2 cup  cooked long grain brown rice
  1. Preheat the oven to 350 F.
  2. In a small skillet, heat the oil over medium heat. Add the onion and bell peppers and cook for 5 minutes or until tender.
  3. Using a large bowl, combine the beef, turkey, salsa, egg, salt, black pepper, and garlic. Stir in the vegetables and rice. Place the mixture in a round baking dish and pat into an oblong loaf.
  4. Bake for 45 minutes, or until meat is no longer pink.
