1 lb  fresh green beans
1 each  small onions
1 tbsp  butter
2 tbsp  whole wheat flour
1 pinch  salt and pepper
0 1/2 cup  whole milk
0 1/2 cup  sour cream
1 cup  shredded cheddar cheese
  1. Steam the green beans for 4 minutes or until tender-crisp, or according to the package instructions, and drain well.
  2. Preheat boiler.
  3. In small pan, sauté onion in butter until tender. Add flour, salt, and pepper.
  4. Gradually add milk, stirring and cooking over medium heat until thickened and bubbly.
  5. Stir in sour cream and green beans, and heat thoroughly, about two minutes.
  6. Transfer to 1-1/2 quart casserole. Sprinkle with cheese. Place under broiler until cheese melts and browns slightly. Watch carefully.
  7. Remove from oven. Serve.
