1 oz  prosciutto
2 cup  frozen green peas
1 oz  pine nuts
1 tsp  olive oil
0 1/4 cup  fresh chopped onion
0 1/4 cup  low sodium chicken broth
0 1/4 tsp  ground oregano
1 pinch  black pepper
  1. Cut prosciutto into thin strips.
  2. In small skillet, add pine nuts and heat over medium. Toast 2-3 minutes, stirring frequently, until golden brown. Remove from skillet and set aside.
  3. Thaw peas under cold running water for 1 minute.
  4. In medium saucepan, heat oil over medium. Add onion and cook 3-5 minutes until tender.
  5. Stir in peas, chicken stock, oregano, and pepper.
  6. Cover and simmer 2 minutes, or until peas are hot.
  7. Stir in toasted pine nuts, serve.
