10 oz  frozen baby lima beans
3 each  fresh tomatoes
1 each  small green bell peppers
1 cup  chopped yellow bell peppers
1 each  medium cucumber
2 each  fresh green onions
1 each  medium garlic cloves
11 1/2 oz  low sodium vegetable juice
3 tbsp  red wine vinegar
1 tbsp  dried dill weed
0 1/4 tsp  salt
1 pinch  hot pepper sauce
0 1/2 cup  sour cream
1 pinch  lime peel zest
  1. Cook lima beans according to the directions on the package then drain.
  2. Put the lima beans in a mixing bowl with all of the remaining ingredients except the yogurt and lime peel, cover the mixture and let it chill for about 3 hours.
  3. Serve with sour cream dolloped in the middle and garnish with lime peel if desired.
