1 each  whole roasting chicken, without skin
1 tsp  salt
2 tsp  fresh chives
3 tsp  ground thyme
1 tbsp  canola oil
1 each  medium onions
2 each  medium garlic cloves
2 tbsp  curry powder
0 1/2 cup  cold water
1 each  medium apples
  1. Remove skin and cut chicken into serving pieces.
  2. Core and chop apples. Peel and chop onions. Peel and slice garlic cloves.
  3. In medium bowl, mix salt, chives, and thyme. Dredge chicken through spices. Set aside.
  4. In large skillet, heat the oil over medium. Cook onion 3 minutes, stirring often, until translucent.
  5. Add chicken to skillet. Brown each piece for 5 minutes per side.
  6. Reduce heat to medium. Add garlic and cover.
  7. In small bowl, mix curry powder and 1/2 cup water. Add to chicken.
  8. Add apples and replace cover. Cook until chicken is tender, about 20 minutes and internal temperature reaches 165°F.
