Ingredients Directions
  1. Place frozen corn in colander. Run under cool water 3-4 minutes until thawed. Drain well.
  2. Slice zucchini in half lengthwise and cut into 1/4" slices.
  3. Remove seeds and chop peppers into 1/2" pieces. Chop tomatoes into 1/2" pieces. Remove roots and 1/2" of top from green onion. Chop into 1/2" pieces
  4. In large bowl, combine zucchini, peppers, onions, corn, tomatoes, salad dressing, and salsa.
  5. Cover tightly, chill 4-24 hours, stirring occasionally. Serve on thin bed of the chopped kale.
