Cut the beef into 1/8-inch strips crosswise and place each strip into a large resealable plastic food storage bag. In a cup combine the soy sauce, sherry, oil, and garlic and pour mixture over steak, then seal the bag and turn to coat the beef.
Marinate the beef in refrigerator for at least 30 minutes or up to about 2 hours.
Take 18 6-inch skewers and soak them for 20 minutes in water.
Drain the steak in the bag and throw away the marinade, then weave the beef strips onto the skewers accordion style and place them on the rack of a broiler pan.
Broil the beef skewers for 2 minutes keeping them 4 to 5 inches away from the heat, then turn the skewers over and broil for an additional 2 minutes or until the beef is barely pink.
If you wish garnish each beef skewer with a cherry tomato, then place on lettuce-lined platter and serve warm.
