2 lb  medium carrots
0 1/2 cup  sugar
2 each  egg whites
3 each  eggs
2 tbsp  white all purpose flour
1 1/2 tsp  low sodium baking powder
3 tbsp  margarine
1 tsp  vanilla extract
1 each  cooking spray
  1. Preheat oven to 350ºF. Cook the carrots slices in a small amount of water over medium-high heat or in the microwave oven until very soft. Drain.
  2. Mash the carrots and add the sugar, egg whites, and eggs. Combine the flour and the baking powder, and stir into the carrot mixture. Add margarine and vanilla and mix well.
  3. Transfer to an oblong 2-quart baking dish coated with nonstick cooking spray. Bake for 35 to 45 minutes or until the center is set.
