6 each  boneless skinless chicken breasts
3 tbsp  fresh tarragon
3 each  medium shallots
0 1/4 cup  white wine
1 lb  fresh mushrooms
  1. Preheat the oven to 350 degrees F.
  2. Cut aluminum foil into 6 pieces large enough to seal chicken breasts
  3. In a separate bowl combine the shallots, wine, and mushrooms. Spoon an even amount of this mixture on each piece of chicken along with a sprig of tarragon.
  4. Fold aluminum foil to seal chicken and cook in the oven for 15 minutes.
  5. Place each packet on a plate and serve in the foil.
