1 each  cooking spray
3 1/2 oz  shredded carrots
6 each  eggs
1/4 cup  whole milk
1 tbsp  onion flakes
4 oz  shredded cheddar cheese
1 pinch  salt
1 pinch  black pepper
  1. Preheat oven to 350°F.
  2. Coat ovenproof skillet with cooking spray. Set aside.
  3. In small saucepan, over medium heat, add carrots and just enough water to cover. Cook until carrots are tender, about 15 minutes. Drain and set aside.
  4. In small bowl, beat eggs with milk, onions, salt, and pepper. Add carrots and cheese.
  5. Pour batter into skillet.
  6. Nest baking pan inside larger pan. Fill larger pan with water, halfway up sides of first pan. Do not let water mix with quiche. Place both pans on middle rack of oven.
  7. Bake 35 minutes, until toothpick inserted in center comes out clean.
  8. Remove from oven and let stand for 5 minutes before serving.
