2 cup  white all purpose flour
1 1/2 tsp  low sodium baking powder
0 1/2 tsp  baking soda
1 cup  sugar
0 1/4 cup  canola oil
0 1/4 cup  orange juice
1 each  eggs
1 tbsp  grated orange peel
0 1/2 tsp  almond extract
1 1/2 cup  fresh cranberries
1 each  cooking spray
  1. Preheat oven to 350 degrees F.
  2. Coat a 9 x 5 x 3 inch loaf pan with nonstick cooking spray. Use a large bowl and mix the flour, baking powder, baking soda, and sugar in a bowl.
  3. In a separate, small bowl, mix the oil, orange juice, egg, orange rind, and almond extract.
  4. Add the orange juice mixture to the dry ingredients, stirring until the dry ingredients are moistened.
  5. Fold in cranberries. Pour batter into the prepared pan. Bake for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean. Serve cool.
