Rinse chicken then pat dry with paper towels. In a large skillet cook chicken and garlic medium heat for 8 to 10 minutes, or until the chicken is tender and no longer pink, occasionally stirring the garlic and turning the chicken once while cooking.
While the chicken is cooking combine lime peel, lime juice, ginger, and red pepper in a small bowl and set aside. Peel the orange and cut the orange in half lengthwise, reserving the orange juice, and then cut the orange crosswise into slices. Put any reserved orange juice and add it along with the lime juice to the skillet.
Place the orange slices and place them on top of the chicken, then cover and cook the chicken and oranges for 1 to 2 minutes more or until it is heated through. Take any reserved drippings and spoon over chicken and serve.
