Ingredients Directions
  1. Saute onion and carrot in a cooking spray coated pot over medium heat until it becomes tender for about 5 minutes.
  2. Mix in the flour and stir. Slowly add the broth, and bring the mixture to a boil, stirring constantly.
  3. Prepare the rice according to the instructions of the package, omitting oil and salt.
  4. Add cooked rice and cooked chicken to the broth mixture. Simmer for 5 minutes and add the sherry.
  5. If soup gets too thick, you can add more water or chicken broth. Boil for about 1 minute and then serve.
