3 each  eggs
0 3/4 cup  fat free milk
0 3/4 cup  Bob's Red Mill All Purpose GF Baking Flour
1 tsp  salt
1 tsp  Gum, xanthan
3 tbsp  butter
  1. Preheat oven to 375°F, with pan in the oven.
  2. Melt butter in the microwave.
  3. Beat eggs, and blend in milk.
  4. Mix flour with salt, and xanthan gum.
  5. Blend flour mixture into the egg mixture.
  6. Open oven and carefully brush butter into the popover pan coating bottom and sides, but not letting pan cool.
  7. Fill popover pan about 2/3 full.
  8. Bake for about 30-35 minutes until puffed, don’t open the oven to keep popovers from dropping.
  9. Poke with a fork to keep from falling.
