3 cup  Potatoes, peeled, cooked, diced
0 1/4 cup  fresh chopped onion
0 3/4 cup  fresh chopped celery
4 oz  Cucumber, fresh, medium
0 1/2 cup  shredded carrots
2 each  large hard-boiled eggs
0.3333 cup  low calorie French dressing
2 tbsp  fat free mayonnaise
0.125 tsp  black pepper
  1. Combine the potatoes, onion, celery, cucumber, carrots, and eggs in a bowl.
  2. Mix in the French dressing, mayonnaise, and black pepper.
  3. Cover and refrigerate for 15 minutes, stir once again, and serve.
